That and the silly-bugger way it does the reply tab. Of the five posts
in today's packet 2 are from me, 2 are to me and one is a wild card. I'm
not enough programmer to ever suggest a cause - or fix. Bv)=

Me too. But, truthfully the best thing about the "good old days is that
they're gone. I look to the future with hope.

Guy sked me the other day if I'd retire completely if I hit a winner in
the Lottery. Probably not. It gives me something to do besides pounding
on this keyboard and hanging arund the house. Aside from the fact that
I have always enjoyd helping people.
My housemate hangs around the house all day. I often find him asleep
in his chair in front of the boob tube. Gotta stay active. I've seen
too many people I know who worked hard their whole lives and retired
just sit in front of the TV and fall over dead in six months or so.

Title: Marsha's Mom's Utah Funeral Potatoes
Categories: Potatoes, Poultry, Cheese
Yield: 8 Servings
6 c Diced potatoes
10 3/4 oz Condensed cream of chicken
- soup
1/4 lb Butter; melted
1 c Sour cream
2 c Cheddar cheese; grated,
- divided
1/4 c Grated onion (opt)
Salt and pepper
INGREDIENT NOTES: For the potatoes, it's best to bake
russet potatoes wrapped in foil, then peel and dice them.
If you want, you can substitute plain frozen diced (not
shredded) potatoes. Let the potatoes thaw before using
them in the recipe.
Combine soup, butter, sour cream, 1 cup cheese, onion,
salt and pepper. Mix well. Add the potatoes and stir
gently until combined.
Place potato mixture in a 2-3 quart casserole dish or 9"
X 13" baking pan. Top with the remaining 1 cup cheese.
Bake uncovered at 350oF/175oC for 30-45 minutes or until
hot and bubbly.
A lot of people put crushed corn flakes on top of the
funeral potatoes. My mom doesn't do this, but I've eaten
them that way and it does add a nice crunch. If you want
to use the corn flake topping, mix 3 tablespoons butter
with 3/4 cup crushed corn flakes and sprinkle over the
potato mixture before baking. If you're planning to use
a crumb topping, mix all the cheese in with the sauce and
don't reserve any to sprinkle on top.
