My wife's birthday was this weekend, and we went to a restaurant in
Carmel-by-the-sea last night. I had the Osso Bucco, she the risotto. We
split a Caesar salad, and couldn't place why it was so good.

The anchovies were fresh.

We live near Monterey, where Cannery Row was where all of the anchovy
and sardine canneries thrived in the early 20th century. They must still
be able to harvest some, because this anchovy wasn't oily, didn't have
that musky, fishy taste - it was much lighter, much more complex. Very
interesting.
