Mayo? Sounds like it's just masking the otherwise undelectable
flavour of the liver.
Growing up on a farm, liver was a common main dish. My mom
would just coat liver pieces with a batter of milk/egg , coated
with flour with a touch of pepper, and fry it in butter with a
side of onions.
Only the occassional piece would be stringy or hard.. but most
were kinda melt-in-your-mouth variety.
Today.. I couldn't be bothered with eating liver.
