Title: Chicken Salad Party Sandwiches

Yield: 16 servings
4 c Diced cooked chicken
1 1/2 c Dried cranberries
2 Celery ribs; fine chopped
2 Green onions; thin sliced
1/4 c Chopped sweet pickles
1 c Mayonnaise
1/2 ts Curry powder
1/4 ts Coarse ground pepper
1/2 c Chopped pecans; toasted
16 Whole wheat dinner rolls
Leaf lettuce
In a large bowl, combine first 5 ingredients. Mix mayonnaise, curry
powder and pepper; stir into chicken mixture. Refrigerate until
serving.
Just before serving, stir in pecans. Spoon onto rolls lined with
lettuce.
