      Title: Vegetarian Chilli
 Categories: Vegetables, Squash, Beans, Chilies, Herbs
      Yield: 8 servings
 
      1 tb Olive oil
      1 sm Red onion; chopped
      3 cl Garlic; minced
      1 md Red bell pepper; chopped
      1 md Zucchini; chopped
      1 sm Carrot; chopped
     28 oz Can crushed tomatoes
     14 oz Can black beans; rinsed,
           - drained
     14 oz Can kidney beans; rinsed,
           - drained
      1 c  Water
      1 tb Paprika
      1 tb Ground cumin
      1 tb Chilli spice mix
      1 tb Ground cinnamon
      1 ts Cayenne pepper
           Lime wedges & chopped fresh
           - cilantro; opt
 
  In a large skillet, heat olive oil over medium heat. Add
  onion and garlic; cook and stir 3-5 minutes.
  
  Add red pepper, zucchini and carrot. Cook and stir until
  vegetables are tender, about 10 minutes.
  
  Add tomatoes, beans, water and seasonings. Reduce heat
  and simmer, uncovered, 40 minutes adding more water as
  needed. If desired, serve with lime and cilantro.
